Why Some Fat In Your Salad Is Good
A recent study by the University of Iowa found that eating salad and vegetables with some added fat actually promotes the absorption of lycopene, alpha and beta-carotenes. A little low fat dressing or moderate amounts of other toppings to flavor your salad makes the experience more enjoyable, as well as healthy and convenient.
