Article: Primary Nutrition - Eating Healthy with Food First

The U.S. Surgeon General has called this the sickest generation ever. This remark referred to the standard American Diet, SAD, an appropriate acronym. Our food is grown in depleted soil, is over-refined and then to make it “nutritious,” it is “fortified.” While this may sound comforting to the average American, what does it actually mean? Most Americans eat a diet that has little or no nutritional value. We are all busy and many of us eat fast food, either from drive-in windows or the supermarket aisles. When we get this fast food home from the market, we throw it in the microwave. It has been shown that this method of heating changes the molecular structure of food. In our society, convenience comes before health.

When your body gets food in a state that does not reflect nature, it is not sure what to do with it. The result is a body out of balance. The brain sends the message that the body is starving and it goes into survival mode: the body holds onto the food. The result is a nation of overweight people. Nearly 2/3 of us are over-weight and 30% of us are obese. Severely over-weight people are having their stomachs stapled as a solution. Besides the danger of the actual surgery, there are potentially dangerous side effects.

One out of every eight kids under the age of 12 has Type II Diabetes. This used to be referred to as Adult Onset Diabetes, that is no longer true. Fifty years ago the cancer statistic was one out of a thousand, then in the early 1990s it went to one in nine. Now, 2.5 people will hear the words, “You’ve got cancer,” from their doctors. About ninety percent of us will die of PREVENTABLE degenerative diseases. What are we waiting for?

The March 2003 issue of Newsweek addresses the problem in an article titled, “A Better Way to Eat.” They say that we have grown fatter and sicker since the USDA Food Pyramid came out a decade ago. According to the article, there is a new Healthy Eating Pyramid devised by Dr. Walter Willett and his colleagues at The Harvard Medical School. The bottom half (and it is the fat half) of this revised pyramid is unrefined plant-based foods. At the bottom of the pyramid, is unrefined grains and healthy unsaturated oils such as olive and flax; the second tier is fruits and vegetables. Next come nuts and legumes, such as beans and peas. Above this are eggs, fish, seafood and poultry then on top of that, dairy products. The apex of the pyramid is shared by red meat and refined carbohydrates. The pyramid does not even address saturated fats, but the apex is a great place for them.

The closer a food is to its natural state, the easier it is for our bodies to recognize it. Other things that are crucial for a healthy body are lots of water (at least a half-ounce a day for very pound of your body weight), exercise and at least 20 minutes a day of sunlight.
